If you like to cook and try out new recipes, you’re gonna love this new recipe our very own Vidhi Doshi a.k.a @RamenHairedGirl has shared with us. She’s constantly experimenting with food and shares all her successful dishes with us so we can try them too. Today, she’s shared an easy-to-cook hara bhara kebab recipe that’s so good, you’re gonna forget all about meat! Here it is!
What You’ll Need
1 bunch palak leaves
1 cup methi leaves
1/2 tbsp oil
1 finely chopped green chilli
A 1-inch piece of ginger, finely chopped
1 capsicum chopped into small pieces
3/4 cup roughly chopped green beans
3/4 cup green peas
3/4 cup boiled and grated potato
3/4 cup crumbled paneer
4 tbsp finely chopped coriander leaves
2 tbsp corn flour
3 tbsp breadcrumbs
1/2 tsp chilli powder
1/2 tsp coriander powder (dhaniya)
1/2 tsp garam masala
1/4 tsp turmeric powder (haldi)
salt to taste
5 cashews halved
oil for deep frying
Here’s How You Can Put It All Together
Step 1
Heat water in a large kadhai, add spinach and methi to it and boil till they are cooked. Remove once cooked, let it cool down a bit and squeeze out all excess water.
Step 2
In a broad non-stick pan, heat the oil and add the green chillies and ginger and saute for 30 seconds.
Step 3
Add the capsicum and saute for 3 to 4 minutes till cooked.
Step 4
Add the green beans and peas, mix well and cook on a medium flame for 5 minutes till all veggies are properly cooked. Remove from flame and keep aside to cool.
Step 5
Transfer the cooled veggies, spinach and methi to the blender and blend till a coarse mixture forms.
Step 6
Add the grated potato, paneer, coriander, corn flour, breadcrumbs, spices and salt and mix well. The cornflour is added for binding purposes and the breadcrumbs are added to soak up any excess water if any.
Step 7
Grease your hands with oil and start making patties (approximately 10-12).
Step 8
Garnish each patty with half a cashew.
Step 9
Deep fry the patties, few at a time. You can even shallow fry them. Drain on an absorbent paper and serve hot.
