This Chinese Green Onion Pancake Recipe Is The Change Your Breakfast Menu Needs

Chinese Green Onion Pancakes

Breakfast is supposedly the most important meal of the day. And ironically, most of us fall short of options to cook early in the morning. We always opt for eggs, poha, upma and dosas. The times we feel adventurous, we order pancakes or waffles, right? Well, today, Vidhi Doshi a.k.a @RamenHairedGirl shares a simple and delish recipe of Chinese green onion pancakes that’ll make you want to eat them erryday! Here it is!

What You’ll Need

2.5 cups maida + more for rolling
1 cup hot water (approx or a little more)
Salt to taste
1.5 tsp oil for spreading
1/2 cup finely chopped spring onions greens
3 tsp oil for cooking

For The Dip

2 tbsp soy sauce
1/2 tsp finely chopped garlic
A pinch of sugar
A pinch of chilli flakes

Here’s How You Can Put It All Together

Mix all the ingredients for a dip together, mix well and keep aside. Sift the maida into a large bowl. Add a generous pinch of salt and slowly add the hot water to it while mixing it with a fork, till all the water is absorbed. Once a rough dough is formed, transfer to a clean work surface and knead it into a smooth dough for at least 7-8 mins. Once smooth, grease a bowl lightly, put the dough in it and cover with a damp cloth and let it rest for 30 minutes (this is important for the gluten to develop)

Once rested, roll the dough into a log and divide it into 3 equal pieces.

Take one portion of the dough on a clean work surface, put some flour on it and roll the dough out as thin as possible. You can make it into a circle or a rectangle. Spread half a tsp of oil and salt to taste even all over. Sprinkle 3 tbsps of green onions all over.

From the longer end start rolling the dough carefully to form into a log.

Now start rolling from one side of the log until it forms a coil shape or spiral.

Rest the dough again for 10 mins. After that, slap the dough to flatten with your hand and then use a rolling pin to roll it out as thin as possible In a round shape. Don’t forget to use some flour to avoid the dough getting stuck. This will ensure the flakiness in the pancake.

Heat a nonstick pan and cook the pancake with using 1 tsp of oil. Cook it on a slow flame so the inside is cooked well. Serve hot with the dip or a sweet chilli sauce!
